<b>Recipe</b>: Spicy zuppa toscana

I am always on the lookout for new recipes. I stumbled upon this particular recipe via a friend on Facebook. Facebook is actually brilliant for sharing recipes (recipes found on other sites or even passed down through the family). This soup recipe received a wonderful response from her family and she shared it to her Facebook page in the hope that others would enjoy it as much as they have. I felt that I must immediately try it, especially considering the cold, rainy weather outside! It was an instant hit in my family and makes for a wonderful winter warmer recipe. Everyone ate this soup with great enthusiasm. There were even requests for more! And, despite its spiciness, my young daughter enjoyed - and finished - two bowls of this soup! It has definitely become one of our family favourites!

Spicy Zuppa Toscana

Ingredients:

  • 1 lb. (453g) Chorizo sausages (I used fresh but I would imagine the precooked or smoked would do just as well), sliced into about four or five pieces per sausage (so not too thin)
  • 4-6 Potatoes, chopped into quarters and precooked until soft but firm.
  • 1 Garlic Clove, finely chopped
  • 32 fl. oz. (946ml) Chicken broth

Method:

  • Brown the red onion and chopped garlic a deep pot.
  • Add sausages and bacon and brown.
  • Add potatoes and chicken broth. Top up with water, if necessary, to cover the vegetables and meat.
  • Boil for about 30 minutes; make sure the meat and potatoes are cooked through.
  • Check and stir regularly to ensure it doesn't stick.

30 minutes before serving:

  • Turn the heat down to simmer.
  • Add cream and kale to the crock pot and stir, make sure there are no lumps in the cream.
  • Cook on for 30 minutes or until broth thickens slightly. You can turn up the heat if the broth is not getting thicker.
  • Take off the heat.
  • Stir in salt, pepper, and/or cayenne pepper to taste.

I served my soup with homemade, cheese-filled bread rolls.

You will note that there is a degree of spiciness or hotness to some of the ingredients but the overall effect is to enhance the flavour of the soup rather than to set your throat on fire. If you do want something milder, use plain pork sausages. Obviously the taste will be altered to a degree. And, of course, if you want it hotter, you could always add a finely chopped chilli or a more generous amount of cayenne pepper.

Krokodil: <b>Recipe</b> for disfiguring addiction

JACKSONVILLE, Fla. -- It's a horrifying new drug that might leave you speechless when you see what it can do to your body. It goes by the street name of "Krokodil" or "Crocodile" and is heavily used in Russia, but recently media reports have instances of it showing up in Arizona, Oklahoma and most recently Illinois.

Krokodil or Crocodile gets its name from how it turns the skin around the drug injection site dark and scaly, then in some cases melting off the flesh all together leaving open wounds.

"If Krokodil makes its way here, I shudder to think of the issues it is going to bring," said Commander Chuck Mulligan with the St. Johns County Sheriff's Office.

Commander Chuck Mulligan said he heard about its use in Russia about a year ago, but there have been no cases reported in Georgia or Florida. He said currently law enforcement is in a monitoring stage, waiting to see if it will appear in our area.

So what is krokodil? It is often a cheaper substitute for heroin. It is a mixture of things like codeine, iodine, gasoline, industrial cleaning oil, lighter fluid and paint thinner.

"This drug has a very horrific effect on the human appearance to others," said Commander Mulligan.

Though krokodil has now appeared yet on our streets, Commander Mulligan still wants the public to be aware of what is out there so parents can warn their children.

"People will watch this story and then google krokodil,"says Commander Mulligan," this is a very dangerous drug and it can have significant impacts on us as a society."

The <b>Recipe</b> for a Successful Harvest America Host Location!

Recently we received an e-mail from Julie, a staff member at Calvary Chapel Surprise, located in Arizona. In that e-mail, Julie shared with us:

"We ordered customized banners and postcards through your site this year. We were thrilled to hear that someone attended our Harvest America event because they were walking down the street and saw our banner. They came forward and gave their life to Christ. We also had two families who came based on the postcard mailing. They also came forward and gave their life to Christ. We encouraged our church body to hand out the invite cards to their neighbor, waitress, banker, grocery clerk, fast food attendant, etc. We had about 240 people attend and 15 people came forward. We are praising God for how he used Harvest America to reach people in our community. Thank you!"

After receiving this email, I followed up with Julie to find out more about their host location; I wanted to know what she felt contributed to their location's success. She told me that she used the information found in her Harvest America Planner, that they had committed to prayer leading up to the outreach, and that they had a plan for how to promote their host location in their community. Not only did they focus on prayer and the opportunity to invite . . . they also offered to bring the guests with them!

So there you have it, the recipe for a successful Harvest America host location: Planning, Praying, Promoting, and then Presenting!

To make a long story short, we triangulated the US in the last seven days from Long Beach, to New York City to Seattle and back to Long Beach. After stumbling off the last flight and back into the house, we found Ree's new book waiting for us on the dinner table. What a sweet treat to come home to after a week of travel. This made us smile. It wasn't soon after, we were craving to cook again and before you knew it, we were diving into one of the best carrot cakes that we ever had.

Two well deserved credits are tied to this recipe: Ree, The Pioneer Woman and her mom's longtime friend, Sigrid. We've never met Sigrid before, but we owe her a big hug for passing on such an heirloom recipe. And we owe Ree a big hug for sharing such a timeless, winning recipe and a big congrats on her latest book, A Year of Holidays.

Adapted from The Pioneer Woman Cooks A Year of Holidays. Ree attributes her recipe to Sigrid, a longtime friend of her mom, declaring the carrot cake one of the best in the Northern Hemisphere. After trying it, we'd have to agree whole heartedly. It is amazing. We adapted the recipe, adding a few more spices, increasing the amount of oil, and by changing the frosting to be a bit more fluid since we like to drizzle over the bundt shapes rather than spread. It is super moist, soft, and heavenly delicious. We divided the cake between two smaller bundt molds, reducing the time by 5-10 minutes, however this recipe is written up for the larger bundt mold since that is what most people will have available. Thanks Ree for another great recipe!

Ingredients:

cake ingredients

  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon kosher or sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (or 1/2 teaspoon freshly grated nutmeg)
  • 1/4 teaspoon ground ginger
  • 1 cup (200g) sugar
  • 1 cup (220g) brown sugar
  • 1 1/2 cups (350ml) vegetable oil
  • 4 large eggs
  • 4-6 large carrots, washed, peeled, and grated (about 2 cups)

frosting ingredients

  • 1/2 cup (1 stick or 113g) unsalted butter, softened
  • one 8 ounce (225g) package cream cheese, softened
  • 1 pound (455g) confectioners sugar
  • 2 teaspoons vanilla extract
  • 1/4 to 1/2 cup milk

Directions:

  1. Preheat the oven to 350°F. Grease and flour a 12-cup bundt pan. Set aside.
  2. In a large bowl, whisk together the flour, salt, baking powder, baking soda, and spices for at least 20 seconds. Set aside.
  3. In a mixer, beat together the sugar, brown sugar, and vegetable oil. Beat in the eggs until combined. Stir in the dry ingredients until smooth. Stir in the carrots until completely incorporated.
  4. Pour the batter in the prepared bundt pan. Smooth out the surface and firmly tap the pan against the counter to release any bubbles.
  5. Bake for 40-45 minutes or until the a toothpick comes out clean when inserted into the thickest part of the cake. Un-mold the cake and allow to cool before icing.
  6. Make the frosting: Beat together the butter and cream cheese until smooth. Slowly beat in the confectioners sugar and vanilla extract. Beat in the milk starting with 1/4 cup, and then adding 1 tablespoon at a time until the frosting is at your desired consistency.
  7. Spoon the frosting over the fully cooled cake (you may have leftover icing- save it to frost some cookies!), and then slice and serve.

Ingredients:

Method

•  Mix the flour, sugar, salt, egg and butter in a large bowl and pour in the milk until the dough binds together.

•  Cover the mixture with cling film and refrigerate for 20 to 30 minutes.

•  Prepare the filling by pouring hot water over 2 cups of pitted dates. Allow them to remain in the water for 5 minutes before draining it and mashing the dates into a smooth paste.

•  Roll the dough mixture into a thin layer and spread the date mixture over it evenly.

<b>Recipe</b>: Bombay grilled sandwiches

Ingredients

For Green Chutney:

Coriander Leaves - 1/2 cup tightly packed

Mints leaves - 1/2 cup tightly packed

Green Chilies - 3 medium

Salt to taste

For Assembling the Sandwich

Cucumber Slices, Tomato Slices, Boiled Potatoes, Onion Slices as required

Butter as required

Chat Masala - 1/4 tsp

Salt to taste

Grated Cheese for Grilled version.

Method of Preparation

To make the Green Chutney

Wash and chop the coriander and mint leaves. In a mixer take the leaves along with green chilies, salt. Make it into a smooth paste. Try not to add too much of water.

To assemble the Sandwich

Peel and finely slice the vegetables into thin slices.

Trim the bread on all sides if required. Apply butter on a bread, then apply the green chutney all over.

Place cucumber, tomato, onion, boiled potatoes, sprinkle salt, Chat Masala and pepper if required

Then place the other slice over one and cut into bite size.

To make grilled Bombay Sandwich:

Once you are done with placing the sandwich, spread the grated cheese over it.
