Spring Picnic Recipe – Salmon and Dill Triangles | The Neff Kitchen

It's now the Spring racing season, and what better way to celebrate it than sharing some nibbles with friends. Whether you're attending a formal occasion or simply heading along to a picnic, these golden triangles are a sure bet.
There's a lot of flavour packed into the filling so a little bit goes a long way, making these an economical recipe for a crowd. Don't forget the dipping sauce too! It's the perfect addition and well worth its own recognition.
Salmon and Dill Triangles
WHAT YOU NEED –
- 2 x 24cm square sheets of ready rolled puff pastry
- 200g salmon fillet, skin and bones removed
- 2 tablespoons finely chopped dill
- 1 tablespoon sour cream
- 1 egg, beaten
- Sea salt flakes and cracked black pepper to taste
FOR THE DIPPING SAUCE -
- ½ cup sour cream
- 2 teaspoons wholegrain mustard
- 2 teaspoons finely chopped fresh dill
- 2 teaspoons lemon juice
HERE'S HOW –
- Preheat Neff oven on CircoTherm intensive setting to 220°C and line 2 baking trays with baking paper. Combine all dipping sauce ingredients and place in a small bowl.
- Cut each pastry sheet into 9 small squares approximately, 8cm x 8cm. Finely chop salmon, add dill and sour cream and mix well. Place a small spoonful of salmon mixture onto each pastry square. Moisten edges of pastry with water and fold in half to form small triangles.
- Arrange in a single layer on baking trays, brush lightly with egg and sprinkle with salt and pepper. Bake for approximately 10 minutes or until puffed and golden. Remove to wire rack or serve immediately with dipping sauce on the side.
RECIPE TIPS
Adding some moisture when baking puff pastry gives a light crisp result. Try the following settings – timing may vary slightly in different ovens so check your triangles early! The temperature remains the same.
- Neff CircoSteam combination oven – use the CircoSteam setting
- Neff VarioSteam oven – use CircoTherm intensive setting and set steam to medium

Pancakes! Is there anyone out there who would turn down a stack of flapjacks on a Sunday morning? Didn't think so. Luckily, a pancake breakfast doesn't always have to mean a carb-blowout–you just need to take the right approach.
Enter this recipe for blueberry oat pancakes with maple yogurt. It may sound decadent, but thanks to some smart swaps and wholesome ingredients, this dish is actually good for you.
One serving (three whole pancakes!) packs 26 grams of protein, 6 grams of fiber, and a powerful punch of antioxidants. You'd be hard-pressed to find a better breakfast option.

Trim Healthy Mama Recipe Roundup
I have been struggling to find more recipe ideas for the THM program. While the book is great and has a great foundation for recipes, you will want to start to branch out. Some yummy recipes to try:
Thai Chicken Noodle Soup - This is an easy soup to make and can be changed up as you need. If you are not familiar with Konac Noodles, you can sometimes find them in the ethnic sections of the grocery store.
Spaghetti Pie - Be sure to use Dreamfield's pasta in this recipe to keep it THM friendly.
THM Style Chili - Looking for the ultimate comfort food -this is it!
Chicken Carbonara - Chicken, cheese and bacon, oh and pasta …. YES Please.
Shrimp Thai Pad - I am not a huge fan, but if you love shrimp – this looks great!
