| Kristin Berkey-Abbott: The Perfect Dinner <b>Recipe</b> for Hectic Lives Posted: 25 Nov 2013 01:52 AM PST At some point last week, I read Leslie's post about the simplest tomato sauce for pasta ever: 4 ingredients that simmer for 45 minutes to make a perfect sauce. No chopping of onions. Canned tomatoes. Could it really be this easy? I'm delighted to report that it can be. Easy and delicious. Like Leslie and her spouse, my spouse and I ate the whole thing in one night. And cheap: I used Hunt's petite diced tomatoes. That can cost roughly $1.50, the pasta cost $1.50, the butter maybe 50 cents, maybe a dollar, the onion maybe a dollar, if that much. Our whole meal was roughly $5. Amazing. The next night we had a dinner of mashed potatoes and New York strip steaks. I kept thinking, this meal cost almost $25, but last night's meal was so much better. And did I mention how amazing it tasted? My spouse and I have very different preferences in tomato sauce, and we both loved this dish. We need more of these recipes: simple pantry ingredients transformed into something nutritious and filling--and YUMMY. It's good to remember that dinner can be this easy. All we need are a few more recipes like this one, and we're set for weeknight suppers. Or elegant dinner parties. Or anything in between. Here's the recipe. It really is this simple: INGREDIENTS •2 cups tomatoes, with their juices (for example, a 28-ounce can of San Marzano whole peeled tomatoes) •5 tablespoons butter •1 onion, peeled and cut in half •Salt • PREPARATION 1. Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt. 2. Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed. 3. Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta. ~Recipe by Marcella Hazan, who died recently. I hadn't ever heard of her. This recipe convinces me that I need to find out more. | ||

Comments (1) A POPULAR butchers is still bringing home the bacon, a year after the owners of the bakers next door took it under their wing. Swales butchers, in Scartho, was taken over by husband and wife Steve and Lisa Singleton who own neighbouring bakery The Icing Cabin – when previous butcher Graham Swales hung up his apron. The couple have celebrated the inaugural year of their new business and said the success has even rubbed off on to their existing bakery. "It's been a very good year for us, lots of new customers have discovered the bakery and vice versa," said Steve. "The butchers is next to The Icing Cabin and I always said to Graham that he should give me first refusal if he wanted to sell. "It helps that the butchers always had such a good reputation, so we could keep the name and keep that tradition going. "Because it has been so popular we have managed to take more staff on, creating new jobs in the process. "But that's all thanks to our customers who we thank for sticking with us." It is not the first time Steve has saved a business from potential closure. In 2007, when Smith's bakeries went into liquidation, he took on the premises in Waltham Road and Grimsby's Top Town Market. Taking over Swales was a return to Steve's original roots, as he worked at Surfleets butchers, in Alexandra Road, Grimsby, when he left school at 15. He said the fact that there are so many independent businesses on Waltham Road keeps customers coming back. "It is very much a thriving area at the moment, especially when you consider the state of the economy," he said. "There is a good community here and they trust their local traders who use quality products sourced locally. "Our sausage recipe has been handed down for over 100 years since the first butchers opened in Scartho. "We have enjoyed the experience in the last year and I would definitely encourage other people to try to expand if they can. If you are putting something good out there then people will support you." Steve and Lisa's business empire is now truly a family one, with son Lewis, 20, recently taking up the apron at the bakery. Swales is thanking its loyal customers by keeping its magnificent Christmas turkeys at the same prices as last year. | ||

It has antioxidant properties which protects the body from free radicals. Spinach or palak soup is very simple to prepare, nutritious and also delicious. This picture was waiting for more than a year to be posted. I have the habit of having more than 30-40 pictures in stock. Sometime I even forget and prepare the same recipe again. Anyway, Today I am going to share with you how to make spinach (palak) soup following this easy recipe.
Prep time -under 15 mins Ingredients needed Spinach -1 1/4 cup Salt and pepper powder to taste For garnishing Cream -1/4 cup Preparation Wash spinach and discard the thick stem. Chop the leaves and keep it ready. Method Heat butter in a pan and saute onions until it turns transparent. Add chopped spinach and saute for a few more seconds. Add 1 1/2 cup of water and cook on medium flame for 10 minutes. After it cools, blend it to a puree. Strain it using a soup strainer. (If using mixie, strain the water, (reserve that water) grind it and then add the water to the ground spinach paste. Strain the mixture.) Mix corn flour to a little milk without any lumps. Then add the rest of the milk and mix well. Reheat the soup. Add the milk + cornflour mix to the soup and bring it to boil in medium flame. Once it boils, simmer for 5 minutes. Add salt and pepper powder to taste. Switch off the flame and serve hot garnished with bread croutons and cream. Simple isn't it??
