FOR the second week of the Clean and Lean Summer Body Plan, James has created a sumptuous meal plan that will fill you up and help trim you down.
Don't worry if you don't have all the ingredients in this meal plan, it is only a guide.
Get creative and have fun while making a delicious clean and lean dish.

Poached eggs with broccoli, rocket, grilled tomato and parmesan
Serves 4
Ingredients:
2 tomatoes, halved
1 broccoli, cut into florets
4 fresh organic eggs
Parmesan, for sprinkling
Rocket, to serve
Method:
1. Heat the grill to high and place the tomatoes under it for a few minutes until coloured.
2. While the tomatoes are cooking. Steam the broccoli for 3-4 minutes until just tender, then set aside.
3. Meanwhile, bring a pan of water to the boil. Stir the water rapidly to create a whirlpool and crack the first egg into the centre: the swirling water should bring the eggs together. Repeat with the remaining eggs (3-4 minutes is sufficient cooking time).
4. Serve each egg with the broccoli and grilled tomato. Grate a little parmesan over the top and scatter rocket over the plate.
Grilled chicken breasts with spicy salsa and spinach and avocado salad

Ingredients
4 skinless organic chicken breasts 4 tablespoons fresh lime juice 60ml olive oil
1⁄2 teaspoon chilli flakes
freshly ground black pepper
2 tablespoons chopped coriander leaves
For the salsa
1⁄2 red onion, finely chopped
1 tomato, finely chopped
1 tablespoon fresh lime juice
1 large clove of garlic, crushed
2 teaspoons deseeded and finely sliced jalapeňo pepper
1⁄4 teaspoon ground cumin
1⁄2 teaspoon sea salt
200g baby spinach leaves
1 ripe avocado, peeled and sliced
1 tablespoon extra virgin olive oil
1 teaspoon lemon juice
Method
1 First make the salsa. In a bowl, mix together the onion, tomato, lime juice, garlic, jalapeňo pepper, cumin and salt. Let it sit at room temperature for about 1 hour to allow the flavours to mingle.
2 In a shallow dish, mix together the lime juice, olive oil, chilli flakes and pepper. Dip the chicken in the mixture until well coated. Marinate in the refrigerator for at least 1 hour.
3 Put the chicken on a baking tray and place under a preheated grill, 20cm from the heat. Grill for about 8 minutes on each side, or until a fork can be inserted in the chicken with ease and the juices run clear, not pink.
4 Divide the spinach leaves and avocado slices between 4 plates. Whisk together the olive oil and lemon juice, season with salt and pepper, and drizzle over the salad. Place the chicken on top, spoon over the salsa, garnish with chopped coriander and serve immediately.
5 Wash the spinach well. Drain and chop, then squeeze out the excess water. Add the spring onions, lemon juice, oil and pepper.
Salmon en papillote with ginger & lime
Serves 4

Ingredients
5cm piece ginger, peeled and thinly sliced
2 cloves garlic 4 spring onions, finely sliced
1 red chilli, finely sliced
4 salmon fillets
Juice of 1 lime
1 lime, thinly sliced
4 sheets of baking paper, each large enough to fold over the salmon and form a parcel
Method
1 Preheat the oven to 200°C. 2 Mix the ginger, garlic, spring onions and chilli together
in a bowl.
3 Place each piece of salmon in the centre of a sheet of baking paper, and top with a quarter of the ginger mixture. Sprinkle each fillet with lime juice and then top with a few slices of lime.
4 Fold the paper over each fillet and tuck the edges in to form a parcel.
5 Place the parcels on a baking tray and bake for around 12 minutes.

This classic homestyle slow cooker meatloaf was my first attempt at making meatloaf in the crockpot.
I adapted the recipe from one in 300 Slow Cooker Favorites, by Donna Marie Pye, who says that there is NO better way to cook meatloaf than in a slow cooker.
Which makes sense since the moist heat of the crock pot will help to keep meatloaf moist and juicy.
Served with mashed potatoes and slow cooker brussels sprouts, this classic homestyle slow cooker meatloaf was a big hit with my meatloaf loving husband.
I made a couple changes to the original recipe, substituting 1/2 cup quick cooking oats for 1 cup dry breadcrumbs and chili sauce instead of ketchup.
You'll definitely want to line your crock pot with foil strips to help with lifting it out when it's done. Next time I think I'll use wider strips of foil or I may try baking it in a loaf pan placed inside the slow cooker.
Overall, I was really pleased with the flavor and texture of this slow cooker meatloaf.
According to my calculations, each serving has 214 calories and 5 Points Plus when made with extra-lean ground beef. It works with Simply Filling too.

Classic Homestyle Slow Cooker Meatloaf

Moist and juicy, this classic homestyle slow cooker meatloaf became an instant family favorite the first time I made it.

Ingredients
- 1 cup finely chopped onion
- ½ cup finely chopped celery
- ¼ cup shredded carrot
- 1 large egg, lightly beaten
- 1-1/2 pounds extra-lean ground beef
- ½ cup quick cooking oats
- ½ cup ketchup or chili sauce
- 1 tablespoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
Instructions
- This meatloaf cooks directly in the slow cooker, so for easy removal you want to line the slow cooker with foil strips that you can use to lift it out when it's done.
- I used my 6-Quart oval slow cooker but any size from 3-1/2 to 6-Quart should work.
- Cut a 2-foot length of foil in half lengthwise. Fold each trip in half lengthwise to form two long strips. Place the foil strips in the bottom of the slow cooker in a cross pattern. Trim them to be even with the rim, so they don't get in the way of the crock pot cover.
- Spray the crockpot and foil with nonstick spray.
- In a large bowl, combine the onion, celery, carrot, egg, beef, oats, ketchup, garlic powder, thyme, salt and pepper. Use your hands to to blend everything together well. Place the mixture in the foil-lined crockpot and form it into an even shaped loaf as best you can.
- Cover and cook on LOW for 5 to 7 hours or until a meat thermometer inserted into the center of the meatloaf reads 170.
- Turn off the slow cooker and carefully grasp the ends of the foil strips to lift out the meatloaf. Let the meatloaf rest for about 15 to 20 minutes to let it firm up before trying to slice it.

Waffle House Waffles- Recipe Clone You'll LOVE – no kidding!!! For the last several weeks I have been reformulating a Waffle House Clone recipe that I found many months ago. You see, my family loves Waffle House waffles, but we hate spending the money for 5 people to eat out for breakfast(each waffle is between $2.50 – $3.00) — so I was looking for a recipe that mimics those delicious waffles and save a bundle of money too!! I probably have no more than $3.00 in ONE batch that makes 12 regular waffles (4 by Waffle House standards) for a savings of $12.00!! Woo Hoo!!
The original "clone" recipe was waaaay to sweet! The second, third and fourth "test" batches were either not sweet enough or too thin! On my fifth attempt at finding a waffle that was similar to Waffle House waffles, I made 4 variations in ingredients and measurements and came up with what my guys call, "A winner". In fact, Karl, my husband, said, "Tell your readers they can expect these waffles to taste like Waffle House waffles, because…they do!!!" The search is over y'all….

Waffle House Waffles Recipe- Clone You
Ingredients
- 3 cups All-Purpose Flour
- 2 tsp salt
- 1 tsp Baking Soda
- 2 Eggs
- 2/3 c Sugar
- 5 Tbsp Butter, softened
- 4 Tbsp Shortening or Lard
- 1 & 3/4 cups Whole Milk
- 3/4 c Buttermilk
- 2 Tbsp Water
- 1 tsp Vanilla Extract
Instructions
- Combine flour, salt & baking soda n a medium bowl; set aside.
- Lightly beat eggs in mixing bowl. Add sugar, butter & shortening to eggs.
- Add whole milk, buttermilk, water & vanilla.
- Slowly add flour mixture to wet mixture, beating just until combined. Mixture will be slightly lumpy. DO NOT OVERBEAT. This causes tough batter.
- You may use the batter after it's "rested" for 15 minutes or chill overnight to use the next morning. It's flavor increases over time. Store any leftover batter in fridge OR go ahead and prepare the waffles, then freeze them and pop in your toaster later.
- Makes 12 waffles

Cooking Instructions: Warm up your waffle iron and make sure it's hot before using. Spray non-stick cooking spray on it so waffle don't stick. Also, cook for 3 - 4 minutes or until golden brown. Generally, once the steam starts to disappear, they are about done. Also, if waffles seem too thick, then add whole milk or water, one tablespoon at the time, to the mixture; stirring after each addition until you reach the consistency you want, which should be that of cake batter.

Tom kha kai is a hot and spicy soup native to Laos and Thailand, typically prepared with coconut milk, chicken, and a delicious variety of vegetables, herbs, and spices. In the Thai language, it literally translates to something like "chicken-ginger soup:" "kha" refers to a ginger-like root traditionally used as a flavoring, and "kai" is the chicken. This soup is based on the tom kha kai concept, but the recipe uses ingredients that you'll be able to find more easily in a typical supermarket. For example, grocery stores in the United States don't typically carry the exact type of root used in Thailand (although if you have an ethnic market nearby, ask them for galangal), but you can get a very similar flavor with ordinary ginger.
The idea of tom kha kai is to enjoy the subtle mixture of all the spices together; that's why this recipe calls for so many different types of flavorings, from the spicy jalapeño pepper to the richer warmth of garlic and ginger to the tangy lime zest and the bright, fresh notes of the cilantro. It's completely adjustable depending on how you feel about spicy food: for a milder soup, just reduce the jalapeño, or for a spicier version, add a little more.
In Thailand, traditional tom kha kai isn't made with skinless chicken breast; it's used as a vehicle for all kinds of organ meat, feet, and even blood. That makes for a much more flavorful and interesting soup if you can get these parts of the bird – plus, it's a great way to get some extremely nutritious odd bits into your diet. But in case you can't find the good stuff, you can still get a really flavorful broth by using the chicken stock in this recipe, which adds subtle savory enhancement to the whole recipe.
You can also save some time with this recipe if you have some leftover cooked chicken already waiting around the fridge. Just make the rest of the recipe as usual, but skip the chicken in Step 4, and wait until Step 6 to add it in. That way, the chicken will pick up the spicy flavor of the rest of the soup, without getting tough from being overcooked. With leftover chicken already cooked, the whole soup would only take a few minutes to prepare, making it perfect for a quick and easy weekend lunch, or a dinner when you need your meal on the table fast, but still want something delicious.

Ingredients
- 1 lb. boneless skinless chicken breasts;
- 1 bunch scallions, thinly sliced;
- 1 red bell pepper, sliced;
- 4 garlic cloves, minced;
- 2-inch piece of fresh ginger, peeled and finely chopped;
- 1 large carrot, peeled and shredded;
- 1 jalapeño, seeded and minced;
- 1 cup shiitake mushrooms, sliced;
- 4 cups chicken stock;
- 1 can full-fat coconut milk (14 oz.)
- 1 tbsp. fish sauce;
- 1 tsp. lime zest;
- Fresh minced herbs, such as cilantro or basil;
- Lime wedges (for serving);
- 2 tbsp. cooking fat;
- Sea salt and freshly ground black pepper to taste;

Preparation
- In a large saucepan, heat the cooking fat over a medium heat.
- Cook the scallions, garlic, and ginger, stirring frequently, until softened (about 5 minutes).
- Add the carrot, jalapeño, and mushroom, and cook until softened (about 3-4 minutes).
- Add the chicken, chicken stock, coconut milk, and fish sauce.
- Bring the soup to a boil then reduce to a simmer and cook until the chicken is cooked through (15 to 20 minutes).
- Remove the chicken from the soup. Shred it into chunks and return to the pot.
- Stir in the lime zest, the fresh herbs, and salt and pepper to taste, and remove from the heat.
- Garnish each bowl with a lime wedge to serve.
