Nana's berry trifle

1. To make the custard heat milk in a two litre microwave proof container on medium for three minutes until very warm.
2. In a smaller container melt butter, add sugar and flour and mix to a smooth paste. Add 1/2 cup of heated milk to paste and mix. Then return to milk and stir well.
3. Heat milk mixture on medium in microwave for 2-3 minutes (depending on power of microwave, make sure the custard doesn't boil over the edges of the container) and whisk to ensure no lumps form. Continue to heat mixture for 2-3 minutes at a time, whisking between to ensure no lumps form.
4. Once thickened so it sticks to back of a wooden spoon, add 1 tsp of vanilla essence and stir. Set aside to cool, it will thicken further on cooling. This can also be done on stove top if you like.
5. Whip cream with icing sugar and 1 tsp vanilla essence to soft peaks.
6. Break sponge into bite sized chunks and lay 1/3 on bottom of trifle bowl - drizzle 1/3 juice over sponge.
7. Layer 1/4 berries on top of sponge and pour over 1/3 custard. Layer 1/3 sponge, 1/3 juice, 1/4 berries, 1/3 custard. And again layer 1/3 sponge, 1/3 juice, 1/4 berries, 1/3 custard.
8. Top with whipped cream and remaining 1/4 berries.
9. Refrigerate for a couple of hours and serve! Yum

A healthy, tasty salad loaded with color and spice -- a relief from all the heavy holiday eats.
Cinnamon Ginger Fruit Salad
Ingredients:
- 2 chopped apples, any red-skinned variety
- 2 chopped pears
- Seeds of 1 pomegranate
- Juice of 1/2 orange
- 1 tbsp chopped fresh ginger
- 2 tsp maple syrup
- 1 tsp lemon juice
- 2 tsp cinnamon
Toss chopped fruit with the lemon juice to prevent browning.
Stir together orange juice, maple syrup, ginger and cinnamon. Pour over fruit and mix well. Transfer to bowl and serve!
*This can also sit for awhile in the fridge and soak up the flavors even more!
