This Spanish Tortilla Recipe is my go-to when I have no groceries and no inspiration for dinner. It's basically a potato onion omlette. It serves as a family main meal and is also a great side dish for brunch. And below you'll read my little tip to make this spanish tortilla even easier…

The classic Spanish Tortilla recipe calls for peeling and thinly slicing 6-8 potatoes (depending on size). For busy Moms, like me, this can be an extra step (you just don't have time for). Make Spanish Torillas easier by using store-bought hashbrowns (found in the freezer section). Pure potatoes without the work ;-).

  • 6 eggs
  • 1 package of hashbrowns
  • 1 onion (chopped)
  • oil
  • salt and pepper (to taste)
  1. Heat oil in frying pan
  2. Add in hashbrowns and onion (fry until golden brown according to package directions).
  3. In bowl, crack and beat 6 eggs.
  4. Pour beaten eggs into fried hashbrown/onion mixture.
  5. Salt and pepper to taste.
  6. EITHER:
  7. Once cooked on one side – use plate to flip the tortilla over and then return to frying pan to finish frying uncooked side.
  8. OR
  9. Put frying pan in pre-heated oven (350C) for 15 minutes. Ensure you have an oven safe frying pan before doing so.

Healthy family recipe: Orange-cranberry fizz

Try this for New Year's Eve punch. Cutting out the sherbet and soda that are in most punches will have you starting off this New Year on the right track.

Orange-Cranberry Fizz

Ingredients:

  • 6 cups seltzer water (flavor of choice)
  • 1 cup 100% orange juice
  • 1 cup 100% cranberry juice

Directions: Mix the seltzer and juices together. Enjoy!

Chef&#39;s new <b>recipe</b> for success

A CHEF who has worked in top hotels in the Lake District has started a new job in Cumbria.

George Cherian, 34, who was head chef at the Sawrey House Hotel, near Hawkshead, has taken over at the Honest Lawyer, in Cockermouth, as executive chef.

He has brought his mix of French and English cuisine to the riverside venue.

Mr Cherian, of Grasmere, is co-owner of the restaurant with Jimmy Haidur, a partner at the town's Spice Club Indian restaurant. Mr Cherian said: "I have always wanted to open a restaurant of my own.

"The response has been very positive and we have already had diners come back after their first meal."

Mr Haidur added: "The type of menu we are introducing has worked fantastically well all over Ambleside so we hope it will in Cockermouth.

"We feel it will benefit us being right next to the river as people will be able to sit outside during the summer."

Ginger Pear Smoothie

I know you know that I think smoothies are the greatest thing since sliced bread (gluten-free of course!). Usually my smoothies do not contain fruit, I prefer adding greens like kale and our Phyto Greens powder instead. However, when winter rolls around, I love to make this Ginger Pear Smoothie, it's got a great kick from the ginger which is balanced by the sweetness of the pear. It's rich and creamy and every sip tastes like a treat!

I like to use Be Well's Whey Protein Powder, especially since I make my smoothie after working out. It's a great post-workout recovery drink and it's also a satisfying and filling breakfast. You can make this with Sustain too if you prefer a vegetarian protein instead.

Here's what I do:

  • 1 scoop Be Well Whey Protein powder
  • 8 – 10 oz water (or half water, half almond or coconut milk)
  • 1 fresh pear, peeled and diced (I use Barlett pears)
  • 1/2 teaspoon fresh ginger, grated or 1/8 tsp ground ginger powder
  • 1/5 of an avocado
  • 4 cubes of ice

Blend in a blender till smooth and creamy. Makes one serving.

Other optional ingredients I like to add:

  • 1 tbs chia seeds – great source of Omega 3 Fatty Acids
  • 1 scoop Be Well Fiber – keeps things moving smoothly
  • 1 tbs Maca powder if I want an additional boost
  • 1 tbs Phyto Greens or a handful kale – because you can never have enough veggies!

I have best recipe for your best lunch. If you are tourist so try this delicious veggie cheese soup. It's a very healthy and comfort for your tourism.
Veggie Cheese Soup Recipe
Ingredients
• 1 medium onion, chopped
• 1 celery rib, chopped
• 2 small red potatoes, cut into 1/2-inch cubes
• 2-3/4 cups water
• 2 teaspoons reduced-sodium chicken bouillon granules
• 1 tablespoon cornstarch
• 1/4 cup cold water
• 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
• 3 cups frozen California-blend vegetables, thawed
• 1/2 cup chopped fully cooked lean ham
• 8 ounces reduced-fat process cheese (Velveeta), cubed
Directions
1. In a large nonstick saucepan coated with a cooking spray, cook onion and celery over medium heat until onion is tender. Stir in the potatoes, water, and bouillon. Bring to a boil. Reduce heat; cover and simmer for 10 minutes.
2. Combine cornstarch and cold water until smooth; gradually stir into soup. Return to a boil; cook and stir for 1-2 minutes or until slightly thickened. Stir in condensed soup until blended.
3. Reduce heat; add vegetables and ham. Cook and stir until vegetables are tender. Stir in cheese until melted. Yield: 9 servings.
